My name is Elizabeth. I share my current dwelling with my husband Fernando, our son Gabriel, and our cat "Mamas."

All three of us are Vegan. It is a new-found love, appreciation and understanding that we have come across. We begun our vegan journey late July of this year (2017) and aren't turning back!

I have always been an animal lover. I volunteered at barns, saved so many kittens I've lost count... heck, I even started grooming because of my love of animals. It sadly didn't hit me that I was causing so much harm to these beautiful creatures until just recently. 

As so many people who have switched, or dramatically changed their diet, our push forward was watching documentaries. The one that stuck out was "What the Health." 

I still feel ashamed that a documentary about health had to be the eye opener. Much like the rest of my life, I'm the type that I believe what I'm told. I rarely look outside what people are saying is true. But this just spoke to me and we began researching on our own the benefits of a vegan diet, a vegan lifestyle, and how to carefully, or intelligently, transfer ourselves and our son. We finally felt comfortable to switch over and decided to use all the old food we had and on our next grocery store visit we were going to only purchase plant based options.

That is honestly how it happened for us. I spent hours, even days looking up what vegan food was. I know it sounds silly, but being a carnivore for so long, cooking without animals frightened me. Off to Youtube and Pinterest I went and I started getting ideas. I was like "whhhaaattt, it's not just salads?!'
Yea... definitely one of those people.

Needless to say I'm happy I am here now, rocking this Veganism with no turning back.
My goal is to share some food ideas I come up with, money saving tips, and maybe just my life with you! I'm excited about this new blog. I hope you are too! Drop a howdy in the comments!

Although I am a stay at home mom, I feel like I am always running around absolutely crazy. I mean... I do have a toddler, so you can excuse the mess right? Any who.... Vegan Pho

Vegan Pho When I moved back to California, I was introduced to Pho by my husband's cousin. And boy did I fall hard! I mean, it has this amazing broth over these delectable rice noodles, and comes in many options. What is there not to love? Since becoming vegan, we never go out to eat anymore. Half of it is due to finances, and the other half is because I am honestly scared of going out and being fed something that is indeed not vegan. So my solution has been to stay at home, research and try to make my own vegan cost-friendly options! Vegan Minestrone Lentil Soup

According to typical Southern California weather, it has actually been feeling like fall! And like how my usual days go, I think ALL day of what I want to make for dinner. I oftentimes find myself thinking of all the things I used to make before switching to veganism and how to make it successfully. So as I was doing my chores around the house I began thinking of things I used to enjoy, and ended up on my patio cleaning up there when it hit me. Fall. Fall hit me, and as mentioned earlier I'm in the Southern California region and it hasn't felt much like fall lately. Sure... we have a chilly day here and there, but it hasn't -felt- like fall until now! Fall for me is being all cuddled up on the couch with a nice warm blanket and a nice hearty bowl of soup like my mom used to make.
