Vegan Cream of Mushroom Soup
I am very much aware that I am late for Thanksgiving, but if your family is anything like mine, we eat *just about* the same thing for Christmas.
Queue this Cream of Mushroom Soup recipe!
This came out SO good! I got plenty of compliments over the weekend from all kinds of people, and that alone helps solidify that this is better than your ole' can of Cream of Mushroom Soup for Green Bean Casserole!
I just followed my typical Green Bean Casserole recipe with this as an addition, and boy was I surprised!
I plan on uploading all of the recipes that really worked out for me this Thanksgiving, so take what you want for future reference, or do like me and make it for Christmas dinner too!
Ingredients:
2 Tablespoons Olive Oil
1/2 of a White Onion (diced)
8 Cloves of Garlic (minced)
1 lb of White Button Mushrooms (chopped)
1/2 Cup of Flour
2 Cups Unsweetened Soy Milk
2 Cups Vegetable Broth
1/2 Teaspoon Nutmeg
1/2 Teaspoon Dried Thyme
Salt and Pepper to Taste
Directions:
1. In a pot (or large tall sided pan) over a medium heat, add olive oil and heat through.
2. Add in your onion and garlic, sauté until onion becomes clear, making sure not to burn you garlic.
3. Add your mushrooms and cook those until lightly browned, stirring occasionally.
4. While those cook down combine soy milk and flour into a separate bowl stirring until combined, then adding to your pan/pot.
5. After you have given that a good stir through, add your vegetable broth, as well as seasonings and bring to a simmer. Make sure to stir constantly as your sauce will begin to thicken.
6. Once thickened remove from heat, and allow to cool. (I made my soup the night before and placed it in the fridge until I was ready for it on Thanksgiving!)
For my green bean casserole I just threw my 4 cans of organic unsalted french cut green beans, this Cream of Mushroom Soup, and topped with fried onions and baked at 350 degrees.
It is your choice to make home made fried onions on top, but I just used store bought ones as I was already making everything else from scratch!
