One Pot Tomato Asparagus Mushroom Pasta (Vegan)


Although I am a stay at home mom, I feel like I am always running around absolutely crazy. I mean... I do have a toddler, so you can excuse the mess right?

Any who.... One pot (or pan) dishes are my favorite thing in the whole world. At the end all you have to clean up is the pot, your cutting board, knife and the plates and utensils you used during dinner. And if anyone doesn't see the allure of that... then we can't be friends... just kidding.

I've always loved quick fulfilling dishes so I came up with this One Pot Tomato Asparagus Mushroom Pasta.

And ya'll this one is so delicious... and simple!

Trust me, it really is simple, it took no longer than 30 minutes. And that speaks to me!


What you will need:
1 16oz package of Pasta (your choice)
1 bundle of fresh Asparagus (frozen is also ok)
3-4 cloves of garlic (minced)
1 cup of chopped mushrooms
1 1/2 cups of halved cherry tomatoes
1/2 of a large red onion (diced)
1 tbsp olive oil
2+ cups unsweetened almond milk (or plant based milk of your choice)
1/4 cup of nutritional yeast (or more to liking)
1 tsp garlic powder
1/2 tsp red chili flakes
1 tsp Italian seasoning
salt and pepper to taste

Directions
1. Preheat your pot at a medium-high heat with a tablespoon of Olive oil (or water if you are doing oil free) As soon as that is warm, add your onions, garlic, asparagus, mushrooms and seasonings (not nutritional yeast), stirring occasionally. 

2. Once the onions appear to be translucent, add your dry pasta and your plant based milk. At this stage I just aim for my milk to cover the pasta, so adjust the amount accordingly. Lower your heat to a simmer and cover around 10 minutes. (checking and stirring as necessary) 

3. When the pasta is just about cooked through, I add the tomatoes and stir again. When the tomatoes become a little wrinkly I add the nutritional yeast, stir and taste to see if any additional flavors are needed then turn off and serve.

This pairs great with a leafy salad and balsamic vinaigrette, and some vegan garlic bread.
